Potato Edzell Blue: This very old variety is still held in high regards for its deep blue skin and excellent taste. The tubers are very floury when cooked and make lovely mash! they are best steamed to avoid disintegration. Skin Colour - Blue. Flesh Colour - White. Uses - steam, mash, chips, saute and roast.
