Find the right time to harvest ... Most herbs should be harvested before they flower. The best time to do this is on a sun-filled morning in the early afternoon, once all the morning dew has dried up.
Do not make large harvests of perennial herbs during the late Summer and Autumn times. Although strangely enough you can make small harvests of herbs during Autumn. In most cases the perennial group of herbs must not be harvested 1 month or less before the first frosts of the season.
One of the unusual things about the herb Sage is that may be at its best to harvest after 2 or 3 frosts have hit the herb. Annual herbs can be harvested until the frost starts.
All herbs must have enough foliage on them to be picked. The oils that are responsible and cause the herbs flavour and aroma must be in their peak if harvesting the herb is to be a success.
